With good ol’ St. Patty’s Day just ONE week away, I figured it was time to create a recipe inspired by the one holiday that gives everyone an excuse to get hammered. With the exception of New Year’s Eve, of course.

However, if you’re like me, you’d much rather prefer to get “hammered” on something more substantial and friendlier to your liver. Although I can’t say the same for your blood sugar levels…

But think of it this way–at least your dignity will remain intact!

Although I’d be lying if I said this isn’t how I normally act without alcohol in my system.

But let’s not go there…

Instead let’s talk about why you really clicked on this post–my answer to the perfect way to celebrate St. Patrick’s Day!

Isn’t it just glorious in all of it’s ooey, gooey, lusciously sinful beauty?

I’m sure everyone can agree that there’s nothing more comforting to the senses than a warm chocolate chip cookie straight from the oven. So how can anyone go wrong with a GIANT chewy sugar cookie filled with rich, melty Hershey mint truffle kisses, sweet white chocolate chips, AND warm gooey marshmallow PEEPS? 

Yes, people!

PEEPS!!!

Instead of plain, boring ol’ marshmallows, I figured I’d kick things up a few notches with some Peeps! Not to mention, green Peeps for St. Patrick’s Day! And if you’re as big of a fan of these sugar-coated gems of fluff as I am, you’ll pretty much die (in a good way) when you try them all warmed up and goo-ified in a giant sugar cookie.

To take the St. Patty’s Day theme a little further, I used Hershey’s mint truffle kisses, which were, to no surprise, A-M-A-Z-I-N-G. I mean, how could you go wrong with velvety, minty melted dark chocolate intertwined with soft, gooey marshmallow?

And just for good measure, I added a “healthy” sprinkling of white chocolate chips. Because as the saying goes, “Everything is better with white chocolate!” 

Or maybe that’s a saying I made up…

Either way, it’s true!

The best way to eat this sin of a dessert? Well besides diving into the pie dish face first like your Miss Piggy (Oh, Kermie!)…add a cool and creamy scoop of vanilla ice cream!

Warm desserts like this are pretty much screaming for something cool to melt all throughout their beautiful crevices of lusciously moist cookie, gooey marshmallow, and rich melty mint chocolate.

Oh, and we mustn’t forget that all-important drizzle of chocolate on top!

Because the pie wasn’t rich enough by itself…

Wanna know the great news? This recipe only requires FOUR ingredients! 

Ingredients

Wanna know the REALLY great news? It’s super stinkin’ easy to make, and I’ve got the step-by-step photo instructions to prove it! So let’s get started, shall we?

Preheat oven to 350F degrees. Press a little more than half of the cookie dough into the bottom and up the sides of a 9-inch pie pan.

Sprinkle the chopped Hershey kisses evenly over cookie dough.

Using scissors coated in nonstick cooking spray, cut the Peeps into smaller pieces and sprinkle them over the layer of Hershey kisses. Try not to feel guilty or sadistic while doing this.

Sprinkle the white chocolate chips evenly over the (dead) Peeps.

Using the palms of your hands or fingers, press remaining dough into flat pieces and layer on top of the pie. It’s ok if you’re not able to cover the entire pie.

Bake for 25 minutes, or until the top is a light golden brown. The pie will jiggle as you take it out of the oven since the insides are gooey. Let pie cool for 25-30 minutes to allow filling to firm up a bit before slicing into. Serve with a scoop of vanilla ice cream and a drizzle of chocolate sauce, if desired.

  • 1 (16 oz) package refrigerated sugar cookie dough
  • 1 (8 oz) package Hershey mint truffle kisses chopped*
  • 1 (3.5 oz) package Peeps marshmallows
  • ½ cup white chocolate chips
  • Vanilla Ice Cream (optional)
  • Chocolate Sauce (optional)

Instructions

Notes

*If you can't find the mint truffle kisses, some great substitutes would be Andes mint chocolates or even those pastel-colored mini nonpareil mints!
*If serving pie later, pie can be reheated in a 350F degree oven wrapped in foil for about 10 minutes. For single servings, I suggest cutting a piece and reheating in the microwave for about 15-20 seconds.
