Spring has officially arrived, everybody!
I can’t tell you how ready I am for this weather to finally warm up a little. I’ve been absolutely aching for those relaxingly warm summer nights for quite some time and now that Spring is here, I can almost taste it. Speaking of taste, boy do I have an exciting recipe to share with y’all today!
In case you haven’t been around this blog long enough to know, I’m a little obsessed with those always adorable sugar-coated PEEPS®. It’s pretty much impossible for me NOT to grab a package of every color and flavor available when I stop inside any store this time of year.
So I’m sure you can imagine just how wildly ecstatic I was when I spotted the International Delight® PEEPS® Sweet Marshmallow Coffee Creamer in my local Walmart. My jaw pretty much dropped THROUGH the floor!
Really, it’s almost embarrassing how excited a “grown woman” like myself can get over things like this. But how can one NOT feel extremely tempted to give this creamer a try when it involves one of the most iconic springtime candies ever?? So being the hot chocoholic that I am, I decided to snatch up this brilliant treasure along with the also intriguing International Delight® Reese’s Coffee Creamer.
Guys…I was not disappointed. The International Delight® PEEPS® Sweet Marshmallow Coffee Creamer has to be my favorite creamer flavor to date. It tastes exactly like cotton candy. So you can imagine how exquisite your morning brew will taste with this in it. But if you’re not a coffee drinker like myself, you’re still in luck! Because this creamer tastes beyond heavenly in desserts like my Peeps S’more Cream Pie.
This pie is basically a mash-up of three of my favorite things–S’mores, PEEPS®, and white chocolate. While it has all of the components of a S’more, it’s definitely not your average S’more Pie. Just consider it a Spring-inspired S’more Pie.
Adorned with pink and yellow PEEPS®, it’s almost impossible not to smile when looking at this pie. And when you take that first bite, you’ll never put the fork down. Seriously. It starts with a cinnamon-spiced graham cracker crust, which is followed by a silky layer of rich white chocolate ganache–so divine and such a nice change from the usual dark chocolate ganache.
The marshmallow filling that goes on top of the ganache has to be my favorite part of this pie. It’s so deliciously creamy, yet fluffy and tastes just like cotton candy, thanks to the uniquely-flavored International Delight® PEEPS® Sweet Marshmallow Coffee Creamer. (I seriously may have to go back to Walmart, and grab myself a few more of these creamers!) The light mousse-like texture of the filling definitely balances out the richer, more dense white chocolate ganache. Even the little dash of cinnamon in the crust makes a world of a difference in rounding out the flavors.
You’ll probably be surprised at how quickly and easily this pie comes together. The crust is pretty much your standard graham cracker crust made by crushing up some graham crackers, and tossing them with some brown sugar, cinnamon, and melted butter. Once pressed into a pie plate, it’s baked until nice and toasty!
Next comes the white chocolate ganache. Just warm up some heavy cream and butter over the stove, then pour it over some white chocolate chips. Cover it and allow it to sit for a few minutes before stirring until smooth. Pour it into the crust, and you’re ready to start on the marshmallowy filling!
Just like the crust and the ganache, the marshmallow filling is made with very few ingredients. All you do is literally heat up some marshmallows with some of the International Delight® PEEPS® Sweet Marshmallow Coffee Creamer until smooth. Stir in a pinch of salt, then allow to cool completely before folding in some whipped cream. This fluffalicious mixture goes on top of the ganache and then the whole pie is refrigerated for at least 4 hours.
Of course, this pie wouldn’t be nearly as festive or PEEP-a-licious without the all-important PEEPS®. Once a lovely border of whipped cream is piped on top, the PEEPS® are placed around the pie. Toss on a few sprinkles at the very end, and you have one the easiest and cutest pies ever.
Peeps S'more Cream Pie
Ingredients
Graham Cracker Crust:
- 1 ⅓ cup crushed graham crackers (8 crackers)
- 2 Tablespoons brown sugar
- ½ teaspoon cinnamon
- 6 Tablespoons salted butter melted
White Chocolate Ganache:
- 7 ounces white chocolate chopped or chips
- ⅓ cup heavy cream
- 2 Tablespoons salted butter
Marshmallow Filling:
- 6 ounces marshmallows (about 30 large marshmallows)
- ½ cup International Delight® PEEPS® Sweet Marshmallow Coffee Creamer
- ¼ teaspoon salt
- 1 cup heavy cream
To Decorate:
- Whipped Cream
- Sprinkles
- PEEPS®
Instructions
Make the Crust:
- Preheat oven to 350ºF. Combine graham cracker crumbs, brown sugar, cinnamon, and melted butter in a medium bowl. Press mixture into the bottom of a 9-inch pie dish and bake for 8-10 minutes. Remove from oven and allow to cool.
Make the Ganache:
- Place the chocolate in a medium bowl. Combine heavy cream and butter in a small saucepan, stirring over medium heat until mixture is smooth and just begins to simmer. Pour over the chocolate, cover with plastic wrap, and allow to sit for 2-3 minutes. Remove wrap, and stir until smooth. Pour the ganache into the crust. Refrigerate for at least 30 minutes, or until set.
Make the Filling:
- Place marshmallows and creamer in a medium saucepan and stir over medium low heat until smooth. Remove from heat, stir in the salt, then transfer to a bowl and refrigerate until completely cooled.
- In a stand mixer fitted with the whisk attachment, whip heavy cream until stiff peaks form. Fold heavy cream into cooled marshmallow mixture, then pour over ganache. Smooth out evenly and refrigerate at least 4 hours, or overnight.
- To decorate, pipe or dollop whipped cream on top. Garnish with sprinkles and PEEPS®.
