Everything you love about a freshly-baked cinnamon roll in this thick and deliciously creamy milkshake!
In case you haven’t been around my blog long enough, I’m a little obsessed with cinnamon sugar. Whether it’s Snickerdoodles, cinnamon rolls, or just straight up cinnamon sugar, I’m obsessed with thinking up ways to incorporate it into pretty much anything I can wrap my tastebuds around. Thus, it should come as no surprise that cinnamon rolls are at the top of my list when it comes to breakfast.
The smell of freshly-baked cinnamon rolls is hands-down my favorite smell in the entire world. And that’s saying a lot seeing as I’m a sugar addict who’s constantly baking up delicious goodies like rich chocolate brownies, chocolate chip cookies, and basically any other delicious sweet you can think of.
While cinnamon rolls aren’t typically the first thing you think of when you want to cool off on a warm summer day, I’ve come up with the perfect solution…
The Cinnamon Roll Milkshake!!!
Because who wouldn’t want a to gulp down a thick and lusciously brown sugary milkshake ALONG with a generously-frosted cinnamon roll??
Honestly, I think this is a genius way to prevent brain freeze since you can alternate between a sip of the milkshake and a bite of the cinnamon roll. BRILLIANT, I know.

All kidding and braggadocios aside, this Cinnamon Roll Milkshake is SO divine and SO over-the-top in the best way imaginable. But instead of going on and on about how amazing this milkshake is, let me tell you how I made this little devil!
To infuse that wonderfully intoxicating cinnamon roll flavor into the milkshake itself, I made up my own brown sugar syrup by cooking together a mix of brown sugar, cinnamon, and milk until the mixture began to boil and the sugar had dissolved. Once this sweet syrup cooled completely, it then went into a blender with some vanilla ice cream and a few tablespoons of milk. Depending on how thick or thin you like your milkshakes, the amount of milk you add may vary.

As for the cinnamon rolls, I went the cheater route by using the Pillsbury brand (from the can). However, if you really want to go the extra mile, feel free to bake up your own homemade batch of cinnamon rolls! In fact, I may be a little biased, but THESE are pretty extraordinary 😉
This milkshake wouldn’t be the head turner that it is without its deliciously decked-out glass. Even though the ready-made cinnamon rolls come with icing, I like my cinnamon rolls to be DRENCHED, so I made up a batch of my own cream cheese frosting. Not only did I spread extra frosting on top of each cinnamon roll, but I also frosted the rim of the glass. I then bejeweled the frosted rim with some cinnamon chips and white chocolate chips, and sprinkled on a little dusting of cinnamon sugar!
With an extra drizzle of brown sugar syrup and a hefty swirl of whipped cream, this Cinnamon Roll Milkshake is heaven in a glass.
Cinnamon Roll Milkshake
Ingredients
Brown Sugar Syrup:
- ½ cup brown sugar
- ¼ cup milk
- ½ teaspoon cinnamon
Cream Cheese Frosting:
- ¼ cup salted butter softened
- 4 ounces cream cheese
- 1 teaspoon vanilla
- 1 cup powdered sugar
Milkshake:
- 3 cups vanilla ice cream
- 4-6 Tablespoons milk
- 4 Tablespoons Brown Sugar Syrup
To Assemble:
- Cinnamon rolls (I used Pillsbury cinnamon rolls)
- White chocolate chips
- Cinnamon baking chips
- Cinnamon sugar
- Whipped Cream
Instructions
Make the Brown Sugar Syrup:
- In a small saucepan, whisk the brown sugar, milk, and cinnamon together until combined. Heat mixture over medium-high heat, stirring constantly, until mixture begins to boil and sugar has dissolved. Transfer mixture to a shallow bowl and refrigerate until completely cool.
Make the Cream Cheese Frosting:
- In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, cream cheese, and vanilla together until smooth and creamy. Add the powdered sugar, and continue beating until combined.
Prepare the Glasses:
- Frost the rim of each glass with the cream cheese frosting, then sprinkle with white chocolate chips, cinnamon chips, and cinnamon sugar. Place glasses in freezer until ready to fill.
Make the Milkshake:
- To a blender, add the ice cream, milk, and brown sugar syrup. Blend on high until smooth and combined.
- Pour milkshake into the prepared glasses. Top each shake with a cinnamon roll, a drizzle of brown sugar syrup, a dollop of whipped cream, and a dash of cinnamon. Insert a couple of straws and sip away!
