Super thick and chunky peanut butter cookies brimming with peanut butter chips, honey roasted peanuts, Reese’s peanut butter cups, and peanut butter Oreos!
As a food blogger, you can imagine how picky I am when it comes to any kind of baked good or dessert. This is especially evident when it involves cookies. I won’t waste my time or energy on a cookie that isn’t at the very least ultra soft, perfectly chewy, and FULL of flavor. That means absolutely NO hard, thin, or crispy cookies for me!
And today’s recipe is the complete opposite of those dried-up hockey pucks that parade around as cookies…
These Loaded Peanut Butter Cookies are just that. LOADED.
Because not only is the dough itself loaded with creamy peanut butter, but it also contains LOADS of peanut butter chips, honey roasted peanuts, Reese’s peanut butter cups, AND peanut butter Oreos.
That’s right. FIVE TIMES the peanut butter, y’all!!!
As you can see, these cookies are THICK. They’re definitely not your average cookie thickness, which is one of the reasons why they’re absolutely glorious. As they bake up in the oven, they get that lightly browned, slightly crisp exterior, while the insides remain nice and doughy. Not a dry crumb in sight.
The key to getting that deliciously doughy interior lies in the shape of the cookies. In the past, I would scoop the dough out onto the cookie sheet, then flatten them slightly to ensure that they baked more evenly. With these cookies, however, I just simply scooped them out onto the sheet and left them as is. Not only did they bake up with unbelievably soft centers, but they have those beautiful ridges on the top.
Once the dough is made, it’s really up to you as far as what kind of candies, cookies, and sweets you want to mix into the dough. To be honest, I just used what I had on hand. Though you’d be surprised at the sheer amount of peanut butter goodies a single childless gal like myself has in their pantry!
After going through all the treats that I had, I eventually settled on a hefty mix of chopped peanut butter Oreos, Reese’s white chocolate peanut butter cups, peanut butter chips, and honey roasted peanuts. With such a variety of textures, these cookies were BOMB. The crispy Oreos with the melty peanut butter cups and the crunchy peanuts made every single bite pure bliss. You really can’t go wrong with whatever you choose to add to these cookies.
These cookies PROVE that there’s no such thing as too much peanut butter…
Loaded Peanut Butter Cookies
Ingredients
- ½ cup unsalted butter softened
- 1 cup creamy peanut butter
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 ⅔ cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup chopped Peanut Butter Oreos
- 1 cup chopped Reese's Cups*
- ½ cup honey roasted peanuts
- ½ cup peanut butter chips
Instructions
- Preheat the oven to 350ºF degrees and line a baking sheet with parchment paper.
- In a large bowl using a hand-held mixer or a stand mixer fitted with the paddle attachment, cream the butter, peanut butter, and brown sugar together on high speed until lightened and fluffy. Beat in the egg and vanilla until combined.
- Add the flour, baking soda, and salt, and continue to beat on low until mixture forms a dough. Stir in the Oreos, Reese's cups, peanuts, and peanut butter chips.
- Using a cookie scoop** or two spoons, scoop out dough and place on the prepared baking sheet about 2 inches apart.
- Bake for 11-13 minutes***, or until edges are set and slightly browned. Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
