Honestly, I don’t think there’s ever been a snack mix I didn’t love. Whether sweet or savory, I can easily devour a few bowlfuls if I’m not careful. But seriously, why does it have to be so DARN addictive??

Puppy chows, AKA Muddy Buddies, are an especially huge weakness of mine. In fact, I’ve got quite the collection of puppy chow recipes on my blog. Aside from the fact that they’re so quick and easy to make, what I love about puppy chow mixes is that the flavor possibilities are pretty much endless. 

So this week, I decided it was finally time to create a puppy chow recipe dedicated to one of the most delicious spreads on this planet……..COOKIE BUTTER.

If you’re new to cookie butter (aka, Speculoos spread or Biscoff spread), it’s basically a spread made of spiced shortbread cookies that have a deep caramel-like flavor. It has a texture very similar to creamy peanut butter, but the flavor is SO totally different. It tastes kinda like gingerbread, but the ginger flavor isn’t quite as harsh–it’s sweeter and BEYOND heavenly. I mean, how can anyone say no to creamified cookies in a jar?

Over the years, I’ve incorporated this heavenly spread into several different desserts. I’ve made oatmeal cookies, pie, whoopie pies, granola, and even crème brûlée. Cookie butter is incredibly versatile and has become just as much of a staple in my pantry as peanut butter.

Like most puppy chow recipes, this one requires very few ingredients–rice cereal squares, white chocolate chips, cookie butter, powdered sugar, and Biscoff cookies. If you’re counting, that’s just 5 ingredients TOTAL!

You’ll start by placing the white chocolate chips and cookie butter in a microwave-safe bowl and heating them in the microwave until the chips have completely melted and the mixture is smooth. This golden liquid then gets tossed with the cereal squares until evenly-coated.

Now, most recipes would simply toss the coated cereal in a bunch of powdered sugar and be done with it. However, being that cookie butter is made from those wonderfully delicious Biscoff cookies, I decided to add an extra coating of Biscoff cookie crumbs. The key is to shake the cereal with JUST the crushed Biscoff cookies first, and then adding the powdered sugar at the end. The reason being that the cookie crumbs are much coarser than powdered sugar, so they won’t stick as well if tossed with the powdered sugar first.

Oh, and here’s a tip! If you want to create less waste, instead of tossing the ingredients in a plastic ziplock bag, try using a large sealed plastic container. Not only does this result in less chocolate getting stuck and therefore wasted on the plastic bag, but it’s much easier to shake and coat the cereal.

And in case there wasn’t enough Biscoff love in this mix already, I went ahead and tossed in some more Biscoff cookies. Just break them up into bite-sized pieces and stir them in!

Easy, no-bake, VERY few ingredients, and super DUPER addictive! Can it get any better than this?

Cookie Butter Puppy Chow

Ingredients
  

  • 1 (8.8 oz) package Biscoff cookies divided
  • ½ cup white chocolate chips
  • ½ cup cookie butter (Biscoff or Speculoos spread)
  • 6 cups rice chex cereal
  • 1 cup powdered sugar

Instructions
 

  • In a food processor (or with a large zip-top bag and a rolling pin), crush 20 of the cookies until broken into fine crumbs.
  • Microwave the chocolate chips and cookie butter in a large microwave-safe bowl for one minute. Remove and stir until smooth and thoroughly incorporated. If lumps still remain, return mixture to the microwave for 20-30 more seconds.
  • Pour cereal into cookie butter mixture and stir to coat. Add the crushed cookies, stirring until cereal is evenly coated. Place the powdered sugar into a large ziplock bag*. Dump the cereal mixture into the bag, seal, and shake until cereal is fully coated. Break or chop up the remaining Biscoff cookies and toss them into the mix. Shake and enjoy!
