Nutter Butter Puppy Chow

Just 5 ingredients to make this addictively sweet mix of Nutter Butter cookie-coated chex squares!

Ingredients
  

  • 6 Nutter Butter Cookies plus more for adding
  • ¼ cup butterscotch chips
  • ¼ cup creamy peanut butter
  • 3 cups rice chex cereal
  • cup powdered sugar

Instructions
 

  • In a food processor (or with a large zip-top bag and a rolling pin), crush the cookies until broken into fine crumbs.
  • Microwave the butterscotch chips and peanut butter in a medium microwave-safe bowl for one minute. Remove and stir until smooth and thoroughly incorporated. If lumps still remain, return mixture to the microwave for 20-30 more seconds.
  • Pour cereal into peanut butter mixture and stir to coat. Dump cereal mixture into bag of crushed cookies, seal, and shake until cereal is evenly coated.* Add in the powdered sugar, seal, and continue to shake until fully coated. If desired, break or chop up a few more Nutter Butter cookies to throw into the mix. Stir and enjoy!

Notes

*Instead of just mixing the crushed cookies with the powdered sugar and shaking, I decided to shake the cereal in the crushed cookies alone first. I found that the cookies stuck to the cereal better when shaken alone, so that you'd end up with fewer loose cookie crumbs that didn't stick to the cereal.
