Beach Party Birthday Cake

I meant to post this earlier, but better late than never, right? A few weeks ago, I was asked to make a beach party-themed birthday cake for a friend’s daughter’s 12th birthday. Here’s how it turned out!

I used white chocolate for the little surfboards, sunglasses, and starfish.

Oh, and these cute little flip-flops! They were on the backside on the cake.

I then used either fondant or buttercream to decorate them.

And being the frugal person that I am, I used the scraps of the cake that were removed to level off the cakes for the “sand.” All I did was spread the cake scraps out on a cookie sheet and placed them in a 250F degree oven for about 25 minutes, until browned and a little crispy. Once they cooled, I crumbled them up in a food processor! Super easy! And I loved the idea of using the scraps of the original cake instead of graham cracker crumbs which might change the flavor of the cake.

Speaking of flavor, the cake was a simple white cake, filled with lemon curd and iced with a vanilla buttercream. Light, sweet, tart, and SUPER delish, if I do say so myself!

The cake was HUGE hit with the birthday girl, and it was wonderful to see the excitement on her face when she saw her special birthday cake!

I’d call that a success in my book 🙂
