Rich, chocolatey Nutella and warm, toasty marshmallows sandwiched between brown butter rice krispies treats!
We’re already halfway through August, which means fall is JUST around the corner! Although I really enjoy the extra long days and warm evening walks with my Olivia, fall is by far my favorite season. I love the relaxing smells that remind me of childhood…the beautiful transformation of the trees…the cool, crisp air…pumpkin-flavored everything…those fun late-night backyard campfires…I CAN’T WAIT!
Speaking of campfires, I think I have the perfect addiction–I mean, treat for your next end-of-summer/fall beginning celebration…
What do you get when you combine Nutella, s’mores, and rice krispies treats?
Uh, heaven…duh.
Because whenever you bite into anything stuffed with Nutella, it feels like you’re floating through the clouds, on a magical carpet, with John Stamos hugging you tightly to his side…at least, that’s the experience I always have…
These Nutella-Stuffed Rice Krispies Treat S’mores take one of the most decadent outdoor treats up a few notches by replacing the graham crackers with rice krispies treats and the hershey milk chocolate with Nutella. Mmhmmm…
And the toasted marshmallows?

But before we get too ahead of ourselves, let’s talk about the rice krispies treats. Now, these aren’t just your ordinary run-of-the-mill rice krispies treats. These are BROWN BUTTER rice krispies treats. Because if you’re melting the butter anyway, you might as well go the extra itty bitty step of heating it a little longer to create those nice toasty bits of warm, nutty flavor. Just be sure to keep a CLOSE eye on it so that it doesn’t go from nice and amber to black and burnt. It happens fast!
To stick with the s’mores theme, I added some crushed graham crackers into the rice krispies treats. However, if you don’t care for graham crackers (haters gonna hate), you could easily substitute them for another cup of cereal.
Now comes the fun (AKA sinful) part–assembling these little (ok they’re massive, I know) s’more sandwiches!
As the title indicates, these are Nutella-STUFFED, meaning, we aren’t going to be skimpy with this stuff. We’re slathering Nutella on BOTH sides of the sandwich.
Yeah baby…we’re going ALL the way.
To do the marshmallows, I cut each marshmallow in half lengthwise, then placed them cut side down on one side of the sandwich. To make things less sticky, I used scissors that I sprayed with nonstick cooking spray.
The next step is what I believe gives these treats that extra oomph–TOASTING the marshmallows. Sure, plain marshmallows are tasty on their own, but there’s nothing like that caramelized, and sometimes charred flavor that toasting gives them. Not to mention, the soft, warm gooeyness created by the heat of the flame. It’s the one time when it’s perfectly acceptable to play with fire!
For all those non-pyromaniacs out there who don’t have a handheld torch at home, you can also place the pan under the broiler for 1-2 minutes. Again, you’ll want to keep a very close on them so that they don’t scorch.
P.S. See that little burnt spot next to the rice krispies treat? Yeah, maybe I shouldn’t be trusted with fire…
Finally, the moment you’ve all been waiting for…the SMUSH.
When it comes to s’mores, there’s something oddly satisfying about smushing the two graham crackers around the chocolate and warm, gooey marshmallow. Just multiply that feeling by ten when you smash the two rice krispies treats together and witness the fluffy gooeyness of the marshmallow and the hypnotic flood of Nutella.
It can’t get any ooey gooier than this, folks.
Once you take the first bite, it’s pretty much impossible to stop. The combination of those nutty, brown buttery rice krispies treats with the toasty marshmallows and the lusciously rich Nutella is indescribable.
I can pretty much guarantee that your stomach will thank you.
Your abs? Not so much.
Nutella-Stuffed Rice Krispies Treat S’mores
Ingredients
Rice Krispies Treats:
- 6 cups crisp rice cereal
- 1 cup graham cracker crumbs
- ½ cup unsalted butter
- Pinch of salt
- 12 ounces marshmallows
S'more Filling:
- 1 (13 oz) jar of Nutella
- 24 large marshmallows, cut in half lengthwise*
Instructions
For the Rice Krispies Treats:
- Grease a 9x13 pan with butter or cooking spray; set aside.
- In a large mixing bowl combine the cereal and graham cracker crumbs.
- In a medium saucepan, melt the butter over medium-low heat. As the butter melts, it'll start to foam, then turn a clear golden color. Continue to stir the butter, scraping up any browned specks from the bottom of the pan as it starts to brown. It should have a nutty aroma.
- Once browned and nutty, turn off the heat and stir in the salt and marshmallows. If the mixture is still too lumpy, turn the heat back on to low and stir until almost smooth. A few lumps are ok!
- Pour the melted mixture over the cereal and stir until evenly coated. Press rice krispies into the prepared pan and allow to set for two hours. To speed up setting time, rice krispies treats can be placed in the refrigerator for 30-40 minutes.
To Assemble:
- Cut rice krispies treats into 16 squares. Spread 1-2 Tablespoons of Nutella onto each square. Top half of the rice krispies squares with 6 marshmallow halves each, cut-side down. Using a handheld kitchen torch*, toast the marshmallows to desired doneness. Place the other half of the rice krispies sandwich on top of the toasted marshmallows, Nutella-side down. Enjoy!

I didn’t know this level of deliciousness was even possible, to be honest. Seriously in LOVE with the browned butter/nutella/s’more mash up. Cannot wait to impress my kids with this one!
