I decided to give these S’more Oreos a try, so I figured why not use them in one of my infamous “mini” trifles?

While these Oreos don’t taste exactly like the real thing, they’re definitely one of Oreo’s better flavor creations. Especially considering the fact that they’ve just released their new Swedish Fish-flavored Oreos…ummmm, I think I’ll pass on that one, Oreo. I admire your boldness though.

With all the layers involved, I decided to take the easy route and start with a boxed brownie mix. Not only are they quicker, but they taste just as good as homemade, in my honest opinion. However, you are more than welcome to use your own homemade recipe, if you so desire. 

The toasted marshmallow filling should be reason enough for you to make these trifles. My only regret is that I didn’t at least double the batch, so that I could use half of it in the trifles and inhale the other half while binge watching episodes of Pee Wee’s Playhouse on Netflix.

The chocolate pudding layer was more of an afterthought since the jars would’ve looked rather empty without the extra layer. Of course, I could’ve just reduced the amount of trifles, but why would I want to give up the excuse of adding ANOTHER perfectly delicious layer to these trifles? Do you know who I am??

Besides, there’s always room for more chocolate.

S'more Mini Trifles

Layers of fluffy toasted marshmallow mousse, crushed S'mOreos, rich chocolate pudding, fudgy brownies and a finale of roasted mini marshmallows!

Ingredients
  

  • 1 batch of brownies baked in a 9x13-inch baking dish*
  • 6 ounces marshmallows
  • 1 (8 oz) package cream cheese
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 (8 oz) tubs whipped topping, thawed
  • 1 (3.56 oz) box instant chocolate pudding
  • 1 ½ cups milk
  • 1 (10.7 oz) package S'mores Oreos*
  • 2 cups miniature marshmallows

Instructions
 

  • Preheat the broiler. Place marshmallows in an even layer on a baking sheet. Place the sheet on the middle rack in the oven and bake for 1 to 2 minutes. Keep a close eye on them, so that they don't scorch since it can happen pretty quickly. When the marshmallows are golden brown, remove the pan from the oven; set aside.
  • In the bowl of a stand mixer, fitted with a paddle attachment, beat the cream cheese, powdered sugar, and vanilla together until smooth. Add in the toasted marshmallows, and beat on high until marshmallows have broken up and mixture is smooth. Fold in 1 1/2 tubs (about 4 1/2 cups) of the whipped topping. Transfer filling to a pastry bag or a gallon-sized ziploc bag with the tip of the corner cut off.
  • In a medium bowl, whisk together the pudding mix and milk until smooth and thickened. Fold in about 2 cups of whipped topping. Transfer pudding to a pastry bag or a gallon-sized ziploc bag with the tip of the corner cut off.
  • To assemble, cut the brownies into cubes, then layer half of the brownies equally among 8 pint-sized mason jars. Pipe half of the marshmallow mousse into each jar. Crumble or chop two Oreos into each jar. Add another layer of brownie cubes (using up the last half of the brownies), followed by the rest of the filling. Pipe chocolate pudding equally among the jars. Spoon or pipe more whipped topping into each jar. Top with mini marshmallows and toast with a handheld kitchen torch.

Notes

*I used an (18.4 oz) box of Pillsbury chocolate fudge brownies.
*If you can't find the S'mores Oreos, use any other flavor you like--Original, Golden, Peanut Butter, etc.

Do these need to be refrigerated if you aren’t serving them at the time?

Yes, I would recommend storing these in the refrigerator if you’re not serving them right away 🙂
