An irresistible mix of raspberry white chocolate-coated cereal, cotton candy popcorn, and milk chocolatey Cadbury eggs!
Easter is almost here, which means it’s that time of year to celebrate one of the holiest of spirits…
THE EASTER BUNNY!!!
Who else were you thinking?
When you think about it, the Easter Bunny is a lot like Santa Claus…if Santa was a big white and furry animal that hid eggs filled with candy and goodies for little children (and 27-year-olds) to find.
Growing up, nothing was more exhilarating than the thrill and anticipation of the annual Easter egg hunt, which was especially true in my family. The egg count seemed to increase year after year, and I think it got up to around 500. It was always a competition of who could find the most eggs as well as who could find the all-important, coveted golden egg. The golden egg had a whole $20, which felt like $200 when you were 9 or 10. To this day, my family STILL holds an egg hunt every Easter for the “kids” who are now in their 20’s and 30’s.
See? You’re never too old for an Easter egg hunt! I’m just going to assume this is normal in every family, even though I’m sure it’s not…
…the recipe I’m sharing with you this week is the perfect treat to share (or NOT share) with your family this Easter. It’s super festive, cute, colorful, sweet, and not surprisingly, addictive!
Ready for it?
EASTER BUNNY BAIT!!!
Since I’m probably the most indecisive person you’ll ever meet (especially when it comes to baking), I couldn’t land on just one flavor for this snack mix. I also couldn’t decide between using chex cereal or popcorn. So, I combined TWO different mixes into one!
The first half is a white chocolate raspberry-flavored mix that combines chex cereal squares, cheerios, and white chocolate.
The second half of the mix is white chocolate-covered popcorn that’s been flavored with the heavenly sweetness of cotton candy.
I repeat, COTTON CANDY.
Yes folks, this IS a big deal.
Once I made the mixes, I added an extra drizzle of white chocolate (because I HEART white chocolate a lot) along with some cute and colorful sprinkles because sprinkles ALWAYS make life better.
Oh, and how could I forget?? I threw in a bag of Cadbury chocolate mini eggs. I mean, this IS an Easter treat for Easter Bunny’s sake! (Yes, I know how lame I’m sounding right now.)
Separately, these two mixes taste fantastic. However, when you mix the two together, they taste fan-FRIGGIN-tastic!
Although white chocolate raspberry and cotton candy don’t sound like an obvious pairing, I was pleasantly surprised at how divine they tasted together. I also really liked the combination of different textures from the chex cereal and popcorn, which is another reason why this mix is so addictive–there are so many wonderful flavors and textures to savor!
Believe me, you definitely want to make this! If not for yourself, do it for the Easter Bunny 😉
Line two baking sheets with parchment paper. In a large bowl, combine the chex and Cheerios.
In a small microwave-safe bowl, melt 8 ounces of the almond bark according to package instructions. Once melted, stir in the white chocolate raspberry flavor mix and pour over the cereal. Stir until evenly coated.
Spread cereal mix into an even layer on one of the lined baking sheets.
Pour popcorn into a large mixing bowl.
Melt 6 ounces of the almond bark in the microwave and stir in the cotton candy flavor mix. Pour over the popcorn and stir until evenly coated.
Spread popcorn mix into an even layer on the other lined baking sheet. Sprinkle Cadbury eggs evenly over both mixes. Melt the remaining 4 ounces of almond bark in the microwave and drizzle it over each mix. Add the sprinkles on top.
Allow both mixes to harden before breaking apart and combining both mixes into one.
