Layers of fluffy Funfetti cake, crushed Oreos, and luxuriously light white chocolate mousse served in individual mason jars!
Aside from my love of “Full House” re-runs, Disney song playlists, and my fear of watching episodes of “Goosebumps” at night, one thing I will never outgrow is my obsession with sprinkles.
Nothing lights me up quite like the marvelous display of assorted sprinkles in a well-stocked bakery section. It’s nearly impossible for me to walk into a craft store without leaving with at least one new enticing bottle of sprinkles to add to my collection. There’s always a reason for sprinkles in my life.
Always.
And this week was definitely no exception.
Mini Funfetti Oreo Trifles!!! (The three exclamation marks are definitely necessary.)
I hesitate to call these “mini” since these trifles aren’t so “mini”. They’re more like cupcakes on steroids.
These mini masterpieces start off with a layer of sprinkle-filled Funfetti cake…
Followed by a light and creamy layer of rich white chocolate mousse…
And finally a chocolatey cookie layer of crushed Oreos.
Repeat this sequence once more with a finale of cute sprinkles (I couldn’t resist!) and you have yourself one of the most to-die-for desserts on this planet.
No joke.
Funfetti and Oreo were just meant for each other. The buttery vanilla sweetness of the cake combined with the rich dark chocolatey flavor of the creme-filled Oreo has got to be illegal. But thank God it’s not.
And let’s not forget the heavenly white chocolate mousse that wraps itself in and out of each cake cube and crumbly cookie morsel. All great trifles have that smooth, creamy, and lusciously fluffy factor to make everything come together in perfect sugar (high) harmony. And the white chocolate mousse does exactly that.
All of the textures, all of the flavors…there really aren’t enough words in the world to describe how pleasant each bite is.
I served these “mini” trifles at a small birthday gathering with friends, and they were all super excited to get to go home with one of these. That is, if they hadn’t already inhaled the whole thing within 2 minutes of handing them out.
I guess there’s just something about desserts in jars, that makes them seem extra special. They may look like more work than your typical cupcake, but they really aren’t. Unlike cupcakes, you don’t have to worry about piping that picturesque “rosé” swirl on top. Trifles are just an assembly line of layering, making for the perfect anyone-can-make dessert.
So what are you waiting for?! Your taste buds are calling!
Mini Funfetti Oreo Trifles
Ingredients
- 1 Funfetti cake baked in a 9x13-inch dish cooled
- 8 ounces white chocolate
- 8 ounces cream cheese
- 2 cups heavy cream
- ⅓ cup powdered sugar
- 24 Oreos divided
- Sprinkles
- 8 pint-sized mason jars
Instructions
- Cut the cake into bite-sized cubes; set aside.
- Melt white chocolate in the microwave until smooth. Allow to cool slightly.
- In the well-chilled bowl* of a stand mixer fitted with a whisk attachment, beat the heavy cream until soft peaks form. Gradually add powdered sugar and continue whipping until stiff peaks form. Transfer whipped cream to another bowl and place in refrigerator to keep chilled.
- Return bowl to mixer. Switch whisk attachment out and replace with paddle attachment. Beat cream cheese until smooth. Add melted white chocolate and continue beating until light and fluffy.
- Add a quarter of the whipped cream and beat until combined. Remove bowl from mixer and use a spatula to fold in the remaining whipped cream. Transfer mousse to a pastry bag or a gallon-sized ziploc bag with the tip of the corner cut off.
- To layer: Place a layer of cake cubes in the bottom of each jar. You'll use half of the cake. Then pipe half of the chocolate mousse into each jar. Crumble two Oreos into each jar. Add another layer of cake cubes (using up the last half of the cake), followed by the rest of the chocolate mousse. Garnish each jar with one more Oreo and sprinkles.
