Happy LGBT Pride Month, everyone!

I know I’m a little late to the game, seeing as this month is already halfway through, but I wanted to post a recipe to celebrate this important time of the year. Plus, I can’t think of a theme that’s more colorful and fun than Rainbow. And boy are there a lot of rainbow recipes all over the Pinternet! Everything from cupcakes, to cookies, to pancakes, to cheesecake….the list goes on!

However, with these ungodly triple digits creeping in (how am I already over summer??), I decided to stay away from the oven this week by making something easy and no-bake.

Enter, Rainbow Puppy Chow!!!

And not only does this mix contain every color in the rainbow, but each color is a different flavor too! The red is strawberry, the orange is…well, orange, the yellow is lemon, the green is lime, the blue is blue raspberry, and the purple is grape. All you need is dry jello mix to flavor each color.

While each color does have to be made individually, this Puppy Chow couldn’t be any easier to throw together. With few ingredients and no oven or stove required, this is also the perfect treat to make with the kiddos. Or for those who are more Sandra Lee than Martha Stewart…if you catch my drift.

Here are a few tips to making this beyond FABULOUS Puppy Chow:

  • First off, you’ll obviously need to get 6 different jello flavors to represent each color of the rainbow. When it comes to the red flavor, your options are more open–you can also use cherry or raspberry if you don’t like strawberry. (Who doesn’t like strawberry though?) Each jello mix is placed into a separate ziplock bag along with 1/4 cup of powdered sugar. One thing I realized while making this was that the jello mixes aren’t colorful at all when dry, which is the reason why I ended up adding some food coloring to the white chocolate. 
  • Speaking of food coloring, I tested both the liquid and gel food dyes, and both worked just as well. The gel is more concentrated so it’ll dye your chocolate quicker, but if all you have is the liquid kind, that’s fine! 
  • Another tip! If you want to cut down on the use of plastic bags (“We love the Earth, it is our planet”), you can do what I did. Instead of placing the jello mix and powdered sugar in a ziplock bag, whisk it together in a large bowl. Once the cereal is coated in the chocolate, transfer it to the bowl of sugar and use a couple of spoons to toss everything together. 
  • As you can see, I added some colored sugar sprinkles to each mix. This was just an afterthought to add some extra color to the mix, but it’s totally optional!

Once all of the colors have been made, you can either store them separately in plastic containers, or mix them all together in one big container. Personally, I think they look prettier when not mixed together, HOWEVER, it’s definitely more enjoyable to eat all of the different flavors at once.

With all of the classic fruity flavors represented, this Rainbow Puppy Chow almost reminds me of Froot Loops. I love that each color is a different flavor. You could even mix just a couple of the flavors together, like strawberry and lemon for a strawberry lemonade mix. Or blue raspberry and strawberry for a berry mix. The options are endless!

Ingredients
  

  • 1 ½ cup powdered sugar divided
  • 1 (3 oz) box strawberry gelatin
  • 1 (3 oz) box orange gelatin
  • 1 (3 oz) box lemon gelatin
  • 1 (3 oz) box lime gelatin
  • 1 (3 oz) box blue raspberry gelatin
  • 1 (3 oz) box grape gelatin
  • 24 ounces white chocolate divided
  • 2-3 Tablespoons coconut oil divided
  • Food Coloring*
  • 12 cups rice chex cereal divided
  • Sugar sprinkles optional

Instructions
 

  • Place 1/4 cup powdered sugar in a ziplock bag. Add the strawberry gelatin, seal, and shake to mix; set aside.
  • In a medium microwave-safe bowl, add 4 ounces of the white chocolate and about a teaspoon of the coconut oil. Heat in the microwave for about 45 seconds, remove and stir. Reheat in the microwave for another 15-20 seconds, or until mixture is smooth. Add enough red food coloring to reach desired shade.
  • Add 2 cups of the cereal into the melted chocolate; stir to coat. Transfer coated cereal to the ziplock bag of strawberry-sugar. Shake on some red sprinkles (if desired), seal, and shake until every piece is coated.
  • Repeat process with the rest of the colors/flavors.
  • Store each flavored cereal separately in an airtight container, or mix all of the colors together and seal in an airtight container at room temperature.

Notes

*Both the liquid food coloring and the Wilton's gel food coloring work--I used both.
